You only need to replace or turn a rotor if it is damaged. Rotors eventually wear thin and need to be replaced, but you'll wear out dozens of brake pads before then.

I'd go with the two small dual sports. Only reason to get a bigger bike is to ride two up. Maybe one of the light weight agile bigger ones for you and a 250 for her.
