There is a ton of great riding in the area. My suggestion would be to buy the Mad Map (https://www.madmaps.com/) for the area and pick a couple of routes. Maybe even link one or two each day.

Double check the camping at Sugarloaf before committing. It was one of the parks closed for the budget BS and IIRC reopened for day use but not camping. If it is open- its a nice place.
