For the shifter, I just bought one with a folding...

I can find the Motoz slightly cheaper so may give that a go this next trip as it sounds like it should be...

I did a similar thing and built some pannier racks that extend around to the number plate as well. I could probably get rid of the supports but there made and fitted so I'll just leave them.
