Any of the latest sport touring tyres will be more than good enough. A lot of guys I know love the Michelin Pilot Road 3's which is probably what I would go for.

How about a KTM 990 SMT? Not a traditional sports tourer, granted, but it'll do everything a sports-tourer would, with a better riding position. A ridiculously fun bike to ride too.
