I have gotten over 50 mpg, one up, 60-65mph avg. Drops to 40mpg or so when touring at 75-80 mph.

Dude, just get out there and ride it hard. Mine cruises at 85-110 with no sweat whatsoever! Just be sure to hold on tight...as you mentioned-it can be a bit windy...
