You should have no problem going from Slade to Harlan in 3 days. If you have the time, keep going to Jellico or Williamsburg.

There are plenty of places to get off the beaten path and camp. Small towns pop up pretty often do food isn't really an issue. I don't see why you couldn't use a hammock.
