Take it easy, do it in stages so you don't go too far. Not to worry though, if you did grind too much, or someday want to re-locate for different pegs or something, a blob of weld on the contact point will let you start over.
That's a great idea! Every other bike I've owned had an easily adjustable splined lever. Your idea is golden. You should get a prize or something. Haven't even looked at that contact point sense I've seen this post, but I wonder if a drill & tap with a small locking bolt, for easy adjustment is possible?
