How much actual suspension travel does the 2012 250 have? I'm guessing the spec sheet has to be wrong, since 2" doesn't come from carving a seat, which isn't how it looks when you see the pictures.

I'd believe the pictures before the specifications. Although actual measurements trump all.
This is my '11. It looks to me like there's a lot more tire-fender space than the '12. Although, bike angle and suspension preload can change that. It looks like the shock reservoir is different, as well as the location of the top of the fork guards relative to the top tubes.
