Two gaskets are for heat isolation, mostly. Also they give the correct rearward positioning of the carbs when the stock air box and rubber boot are fitted.
I prefer to drill and tap holes in the manifolds and use "carb sticks" to balance the carbs, but lacking those you can use drill bits to measure and compare the opening height of the slides. More information here:
