Also, I'm 185 pounds commando (without gear). Wondering what spring rates would be optimal and what are the stock rates? Are the fork springs progressive or constant? I may not be asking the right questions because I really don't know how they work. Back in the day we would drop in new springs and damping rods and adjust oil level. I'm sure technology has advanced past that by now.

Stock F800GS's have .47 KG springs, I'd recommend .51KG for your weight in a straight rate spring, 100mm oil level with 5 weight fluid if running the stock internals.
