I figure this is as good as I'm going to get for the hottest oil. I don't think the sender at the pan really showed how hot the oil was getting. I'm after the peak number. I have an imersion thermocouple I'll rig in a cork to get some accurate pan temperatures (temporarily) and check the difference.
