Near Zion leaves a lot to interpretation. In my mind, the dirt road to Taroweap would qualify. There are lots of backroads on the Escalante step. Coral Pink Sand Dunes might be an interesting diversion. Personally I would step it up a bit and ride Hwy 12. See Bryce Canyon, good hiking there too. Then go on up Hwy 12 to at least Boulder and take the Burr Trail down to Bullfrog. You can loop back on pavement through the main part of Capitol Reef NP or ride the dirt back up toward the visitors center. There are other dirt trails in the area too. Hwy 95 down to Hite is great.
