sorry...NO....GS rims use 40 spokes ,,KTMs 36
I like that idea as there is no need to rely on sealant around the spokes. Are there any other alternatives that avoid sealing around the spokes.
yes,,,we have adapted the 19/17 X_laced rims of the aprillia Caponord for many 36 hole hubs...
Are the rims from GS or alternatives classed as good quality
for ADV touring. I assume the GS rims must be good given the track record on a heavy bike.

You stated that one of the cons would be a slight loss of offroad performance. How significant would that be to a novice off road rider (who needs all the help available). The reality is that in most cases I will be on sealed roads, For a bit of context I've crossed the Andes a number of times on a GSA and not had any issues.
totally insignificant in your case,,,the X-laced pattern is about as tough a wheel design that i've seen
