It's certainly do-able, I've been thinking of a similar idea for enduro bikes, just swap out the tank shouds for small add on tanks when extra fuel is required. I'd worry about the mounting points though, those bolt holes that the shrouds mount to weren't designed to hold much weight.

If anyone's got a Freeride I'd be willing to take a look.

20+ units is probably minimum for a plastic tank, I could make it viable for ~5.
