I haven't tried it myself, as the streams from last year don't seem to work anymore and I don't have another video stream atm.
Here is explained how to set up the command line part, and you can add
--run-time=3600 (as example) to stop the recording after 3600 seconds (set whatever you want)
You can put this complete command line command in the Windows Task Scheduler at the hours you wish, to record the shows.

Set the Triggers tab at the time you want, and the actions tab, set the program to VLC and the argument is the rest of the command line action you got from VLC.
