XL600's are very simple to set up to do what you want. Agressive knobbies and low gearing make it work really well off road. A street tread with stock 15:43 gears work very well on the road. Some add a small windshield.
I like the stock squishy suspension though and I have added progressive suspension springs up front. The shock is on rebound setting #1.
