Vinegar is usually part of the mustard sauce (ohhhhhh baby!) but there is also just the plain down east type vinegar and pepper sauce (ohhhhhhh baby!). Save the catsup Kraft stuff for the amateurs.
Beer is required. Or, vast quantities of tea. Note, I didn't say 'sweet', that is a given.
