I was going to ask you guys about the legality of riding along canals since it's more interesting than taking surface streets, but I just read that I'm not allowed to. But I mean, there aren't any gates so how much trouble could I really get in?

There may not be gates on all of them, but check for signs. They usually allow joggers and dog walkers but no motorized traffic.

I definitely saw some people on the other side at one point, roosting them at 40 might have given them a slight shock.

That is a very big bike doable route. Still not sure about your time est. It will be a long day, but probable can be done.
