Advice on central mexico

Heading to Mex for for a week. fourth year in a row. Looking for advice on good roads, great towns, restaurants, and things to avoid.

Starting from Austin. We have 1 week, we'll be on sport touring bikes (no off roading). We are thinking Xilitla to Querataro, Guanajuato, etc. Anyone riden the roads north of here? Any reason to go to coast? Where would you stay around Monterrey?
