I think I'll make a top like that and look for another used workmate (like a 225) that I can clamp or screw it down to.

Also consider an interior hollow-core door slab (no holes for lockset/hinges). Very stable, very strong, very flat (no sags), usually very cheap. All will be 80" tall (long) but varied widths (probably 24"-36"). You can sometimes get them at surplus outlets for next to nothing.
