On the map screen, tap Maps -> Recorded Tracks -> Hide All.

Any new track you record from now on will appear on the screen again, until you hide it.

To bring an individual track back, open it up in the Tracks section and tap Options -> Follow. Or from the main maps screen, tap Maps -> Recorded Tracks -> Show All (or you can just show all tracks in a specific folder).

The "Realtime Track" visibility is controlled separately from recorded/imported tracks. The realtime track is your movement while you're not recording anything, but have the app running for some other reason. For me this is usually useless commuting or travelling to/from my actual ride, or crazy zigsagging all over the bloody place when I'm inside a house with poor GPS reception planning a ride or something. It's the realtime track that I usually want to hide, not the recorded tracks (having those visible is usually what I want).

You can also control waypoint visibility from the same menu, and a few other things (compass overlay, etc).
