EXC wheels might not fit due to the Adventure having a larger axle.
Remove the right side disc/caliper/brake hose......that saves you about 6lbs if I remember correctly.

I have excel rims on my 07 model 640 adv. The lad I bought the bike off was all about extra strength and weight reduction so I'd imagine they are lighter and stronger.

Yes EXC wheels will fit a 640adv
eventhe 07 model. You just need to swap out the spacers.
I have done it

Excell A 60 Rims and Dirt Star rims are so much stronger and
lighter then the POS stock rims

I have Both style Rims on my bikes
A60's cost a lot more then the Dirt Star Hoops
