Question Winter riding gear

After having ridden 3 Dakars and just recently the Ruta 40, I want some advice on Winter riding gear. In ALL the Dakars we have crossed the Andes Mountains in liason, and I have progressively had more layers and equipment, and still been cold. This last race Ruta 40, I have never felt so cold in my life, and I had 8 layers: Alpinestars Winter Tech undergear, Alpinestars compression jersey, Alpinestars MX jersey, Nike gym jacket, Rally Jacket, Thor casual wear Winter jacket, Alpinestars Quick seal out rain jacket, and Alpinestars mud jacket.

So what has to be worn to be warm in extreme temperaturas??

All advice is welcome!
