Will a v-strom with street tires work will in Ecuador? Will probably travel mostly paved with some dirt roads mixed in.

?? If the roads are paved, why do you doubt that street tires would be fine?

Compared to Peru or even Colombia, Ecuador is probably more paved, so you shouldn't have any problem. I didn't switch to knobbies until Peru or Bolivia.

We are 2-up on a v-strom and did around 3-4000kms in Ecuador. As a previous poster said, there is plenty of tar to get to most places on the tourist trail. We run k60's so get off road a bit but you should still put the Quilitoa Loop on your list so long as it is not raining and take care. Mind, this can still happen regardless of the type of rubber.....

But get something better for the roads in Peru, well worth it!!!!
