Maine to Georgia and back thru New Orleans

I am planning a trip south this winter hopefully leaving from Maine in Dec. and escaping winter and heading south. i know the Smokies and Deals Gap are on the list but anyone have route suggestions and or places not to miss. We are planning on 10 days+ (may have to loose the cell phone en route). Also what is the weather like at elevation in the south in Dec.? Snow?
