Mexico to Costa Rica: What Were Your Must Sees?

I'm planning a trip from Vancouver BC to Costa Rica this new year.

I know many inmates have made this trip but my searching results didn't go that well. Can anyone point me in the direction of a few threads that have made this trip? I'm basically going to blast through the US and start taking my time once I've hit Mexico. I'm looking for a few "must see places" that you may have had on your trip....things that are typically not in every tourist book.

I'd love any help as small as a great taco stand to ancient ruin that no ones heard of.
