Nine days without drivel is truly sadd!

Today I tried making something different. I got a deal on some chicken legs and found this site in a google search. I made the dry rub as described and followed all of the steps.

I used my fry thermometer stuck through the upper vents to measure the inside temp, and avoided looking at the chicken as much as possible. The fan back there is very strong, it was used on low (10 ft away) to regulate temps in the grill. How you aim the air affects temps very quickly and its easy to hold it steady around 325 for 1 1/2 hours or more with a very small fire. I used a small amount of soaked hickory to smoke the meat. The hammer was used to adjust the bottom vent, as per the recipe.

I had 8 legs on the grill for and hour, and turned these 4 around after I took the other off. This shows how the little weber was used as an oven. Two layers of heavy duty foil form a little drip pan that is filled with water or beer during cooking. The tiny pile of charcoal easily sustains itself for 2 hours or more.

I let the chicken stand for 10 min. on a hot plate covered in foil too. Incredibly good chicken! Leave out the Cayenne if you don't like it spicy.

Thanks, the water I put in my homemade drip pan lasted easily for the 1 hour cooking time. What really surprised me is that the charcoal lasted too. I never spread the fire at all.

Temps started dropping at first, so I opened the bottom vent up a tiny bit and put the fan on it. It came up to 375 in a few minutes, so I had to aim the fan away a bit. Once I got it right, I was able to walk away and prepare a fresh salad in the house. Next time I will try the spicy grilled french fries on the site too.

That's some good looking chicken, Jerry.

Webber designs some good grills, and with a few extra tricks like that they can really perform.

I had to add adjustable vents to my standard upright round style smoker to be able to regulate temps better. Maybe I should have tried the fan. Or maybe I'll try the fan now that I have vents. I've been known to stick my fryer thermometer in the grill and the smoker to check temps too.

Yeah, I think the fan is the key to regulating the temp.

The chicken cooked and browned evenly all over without any need for turning it. And I had the grill pretty crowded. Some of the pieces were slightly touching when cooking started.

I have to get a new Webber now, this one is about done. And I have to find those rib racks so I can fit more stuff on my little grill.

Man, I luvs me some mullet. From when I was about 5 or 6 and we usually vacationed at Indian Rocks Beach every summer I could smell them smoking at the little mullet shacks scattered all around that area. Then as a young man I discovered how good they are fried, too.

This place in Titusville serves up some really good mullet "when available"
