Slice thin, brown with onions and peppers, remove onions and peppers, add a packet of fajita seasoning (follow packet directions), add peppers and onions back to pan. From there you can make fajitas, quesadillas, or start some chili.

Really simple marinade that we use occasionally is simple Italian dressing. I like to pierce the meat, or better yet, inject the meat with the marinade.

My preference is the Hidden Valley Ranch packets that you mix yourself. I only use Extra Virgin Olive Oil, and I prefer apple cider vinegar instead of regular white vinegar.

I add some fresh rosemary or dill, lots of garlic cloves, and some kosher salt.

Place the loins in a ziplock bag with the marinade covering the meat for 12 - 24 hours.

I always cook my tenderloins on the grille, or put them in the smoker.

Be careful not to overcook, or it gets tough and looses much of it's flavor.

The 7-Up works pretty well and it doesn't flavor the meat.

Another good marinade uses Extra Virgin olive oil, vinegar (I prefer rice vinegar), fresh lime juice (NOT lemon), and freshly grated ginger.
Mix it up, soak the meat for 4 hours in the fridge and cook. Don't let the temperature get over 145 degrees (I pull it from the oven at 140).
