jalapeno pepper Cookies...

2 cups all-purpose flour ( I use a white whole wheat flour )

1 teaspoon salt

¹⁄4 teaspoon baking powder

14 tablespoons (13/4 sticks) cold unsalted butter, 1/2-inch-diced

6 ounces extra-sharp white cheddar, grated

1/4 teaspoon Cayenne pepper


1 tablespoon minced seeded jalapeno pepper (I now use a whole jalapeno pepper)

1/4 teaspoon chipotle chili powder ( I used Hungarian Paprika)
3 tablespoons ice water

1 egg beaten with 1 tablespoon milk, for egg wash


And sprinkle with Paprika & Cayenne pepper & Fleur de sel or sea salt

What to do

Place the flour, salt, and baking powder in a food processor fitted with the steel blade and pulse to mix. Add the butter and pulse until the mixture resembles coarse meal. Add the cheddar, jalapeno, and chipotle chili powder and pulse again. With the food processor running, add the ice water all at once. Continue pulsing until the mixture begins to form a ball. Dump the dough onto a floured board and roll it into a 15-20-inch log. Wrap in plastic, and refrigerate for at least 1 hour.

When ready to bake, preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.

Cut the dough in 3/8-inch-thick slices. Place the crackers on the prepared sheet pan, brush with the egg wash, and sprinkle with the fleur de sel. And Cayenne pepper and Hungarian paprika.
Bake for 12 to 18 minutes, until golden brown.
Serve slightly warm or at room temperature.

I like them cold and even the next day or a few days latter .. The flavors really meld then.. And they really are good ...

Wow great RR - being from North Calif. I thought we had great places to ride, but W VA and that area is just as good.

That HB is a lucky man -

You have a great writing style, very informative, folksy, makes it easy to read.

I sure do envy all the riding you two do together. My wife has been talking about learning to ride - I think a nice trike would suit her fine.

I was raised on a small ranch in North Calif. your articles about your cattle - sure brought back fond memories. I use to walk into the pasture and visit with all my 'hairy friends' One time we had some city cousins come visit. Calves were about 6 months old. City cousins asked it they like to be ridden. I said 'yes' they do' just walk over and hop on. Heh heh. should have seen the dirt and grass flying. That was 40 years ago and makes me chuckle thinkin of it now

We had FYYFF Visitors in Aug.........

The beginning of Aug… Started our all visitor month..

The first visitors had been on the road for 2 months ..

They started in San Jose, Ca.. Zigzagging across the US…And had picked up another bike in route..
A few months back I had received a PM here saying that they had seen we are on the tent/bed/couch thread.. Staying intouch .. We all got the date down..
We get a call hey we are a few hours away… Yee Haw !!!
This is the 6th or 7th time we had hosted travelers at the farm …
BlueSurf and RiverWolf found the farm with out a hitch…



Their mascots rode the whole way…




We hung outside for a while it was a grand early Aug day..



That night we ate drank and had a grand time telling traveling stories..…

After having some breakfast we said hey lets go for a ride and we’ll show ya some of our fine roads..
At the base of the driveway..

With our talks from the night before we thought maybe head to Welch it’s full of History..

We rode VA 16 .. All the way to Coalwood home of the Rocket boys..



Chatting with locals in from of the gas station in CoalWood..




Then it was over to Welch were we checked out the court house ..



Looking for the bullet holes ,from the coal wars …





Me pointing out that the clock is wrong !!



Sheriff Hatfield was gun down.
On these very steps.. And he was unarmed..
It was the mine dicks,and NO one was brought up on charges..



I just love the old stone and brick buildings..



Ok here is a look around ..When buildings were true works of art...







And they had character



Just look at all the hard brick work...



And a big mural … Cool…



If ya ever get a chance to ride VA16 from Marion Va to Welch .. You’ll have a helluva fun time… And you can say you been to War ( a town before Welch ) and back...


Then we rode through part of the Hatfield/McCoy trail system..
And then on to the Pocahontas mine ..



A good time to cool off . The mine breaths.. and sweet cold air bellows out..



HB was talking to an old miner ..



You might remember his looks (The old Miner) as he did the tour from the Hillbilly Highway ride..

We really had a nice days ride… Riverwolf and I split from the guys as they went to NewGrahme Knives..

And we went to do a little food shopping.. I took RW up one of my favorite roads 598.. As we could see a huge storm cloud back in BlueField..
We never hit any rain ...
Sure wish I could have said that for the guys .. *sniker*

When we all got back to the farm .. It was kinda of late ..
So we said hey ya’ll might as well stay another night… So they did ..

This was also a good time for BlueSurf to pull a little maintenance on his bike..



He just bulldogged his KTM to the ground ,the same way you would wrestled a steer to the ground… And he fixed a leak…



That morning Riverwolf and I headed up the mountain on the quads…




Oh yeah I have Views!!!



Picked a few apples ..
And of course my babyboy Tory came to see what we were up to…
Tory always wants to see if he could get a hand out of some apples…



We rode all around the mountain..



She was really getting into quading ...



When we made it back off the mountain James was starting to load up his bike..
Rachael showed him the bounty..



And she too packed her bike up as well.
It was time for our new friends to head down the trail of cool roads….



Backing out the shop can be tricky..It's a odd slop..



A quick check at the GPS…



And blutooth..



Fair thee well friends safe travels …



We really enjoyed ya’lls stay…

Thank you...they amaze us every day. Certainly the product of love...though not enough hard work--we find some ways to bring that to them.

Mountain Rides

I nearly moved to Roanoke but things couldn't quite work out so I get to ride up whenever I can in the summer. I really like the area and the riding is hands down the best I have seen on three continents. Which is to say I look foreard with eager anticipation to your stories as soon as weather permits. It is great fun to ride along on your trips. Thank you.
