I will hon, I'm sorry I've been absent--both ways--I need the asylum and the visits we have...and I've been a lousy pal of late too.

Things are good though, just crazy. Glad to see you, I'm sure spring is ready to bust out.

Home made Pancakes...(Healthy Kind)

2 C White whole wheat flour (sifted)
3 heaping Teaspoons Baking powder
1 Tablespoon Raw sugar (I use maple sugar or Syrup or Honey)
1.5 Tablespoons of Soy flour
1 Egg
1 2/3 C. Milk ( I use Almond milk)
2 Tablespoons Shortening melted ( I use coconut oil)

What to do...
Start heating griddle... ( I use Coconut oil in the griddle )

Mix all dry ingredients together in a bowl.
Mix milk and egg together. (if you use Maple syrup or Honey add to the egg/milk)
Than add to dry mix .whisk well.
Add the melted shortening. Mix again...

Cook as normal...
They are very light....
You might ask why soy flour?? it adds a little more protein..

That will work too...
I do make my own almond flour...
But it's getting very costly !!!

Relative cost is a matter of perspective, though. Instead of comparing the price of healthy foods to dangerous foods, compare the price of healthy foods to the cost of medical care.

Well as you know I don't go to Dr's ...
So I must look at the other bottom line $$$

But I do add Blueberries and pecans to my pancakes...
And with my life style I really don't need to worry ...

True, worrying helps no one...
But as you well know, education and prevention will! Glycemic load is not about the ill effects of excess calories, rather the ill effects of placing a spiking demand on the insulin system. You have my admiration for how you take care of yourself and Don. I'd put myself in your hands before most any doctor.

Try this one.

Caramelized Banana & Chia Pancakes

Serves 2-4; makes 7-8 pancakes

1 Tbsp Chia Seeds + 3 Tbsp Water
3/4 cup Unbleached White Flour
1/4 cup Whole Wheat Pastry Flour
1 Tbsp Brown Sugar
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Kosher Salt
1 cup Buttermilk or Soured Milk
2 Tbsp melted Butter
1 Banana, peeled, cut into 1/4-inch slices (about 16 slices total)
1 tsp granulated Sugar
Maple Syrup, for serving
Add chia seeds to water and let sit until they gel, about 15 minutes.

In a mixing bowl, whisk together flours, sugar, baking powder and soda and salt. Add the buttermilk and melted butter to the gelled chia, and then combine that into the dry ingredients. Stir until just combined (don’t over mix).

Heat a non-stick griddle over medium heat and spray lightly with non-stick spray. Drop batter onto griddle by 1/4 cupfuls. Place two banana slices into each pancake surface and press down lightly. Sprinkle pancake surfaces with a little sugar.

Flip pancake when bubbles appear on the surface and edges start to look a little dry, about 3-4 minutes. Check side with bananas frequently to make sugar isn’t getting to dark and adjust heat as needed. Cook second side 2-3 more minutes. Keep warm in a 200° F oven if cooking pancakes in batches.

I eat Chia seeds.. As well as Flax seeds.
And I love Quinoa in soup With Minnesota's wild rice..

I had just made Soup today...
