I'm in. Best sandwich I ever had in my life was from shithole near New Orleans, can't remember the name of the town or the place it was a long time ago. The only thing that sticks with me is that taste of that sandwich, and the dude making it bragging about some honey he banged the night before. I didn't see any hand washing. Damn that was a good sandwich.

Cafe rue Orleans is 1150 College across from the old Washington Regional. I'm not a big fan, but one of the original owners was a Cajun.

Lyn D's (Cajun Gypsy) is in Fayetteville at 535 W Poplar (not Sycamore), near the skanky Bottoms Up club. It is a bit up and down, but most authentic IMO for NW Ark. During season they'll sell you a bag a bugs if you ask in advance. They also do a good boil themselves, and the boudin is good, usually. I used to go there a lot before I developed shellfish allergy.
