Ok you meat smokers () I'm doing my first boston butt this weekend, training for ham off. Any tips?

well

rub it with whatever you want, or use nothing
cook it low and slow for a long time, 12-20 hours depending on how many lbs
you want the fat to render out slowly, when the meat is pulling away from shoulder blade bone it is getting done

some of the ham off guys inject apple cider, jalapeño juice
I typically do not inject, I'm a fan of the pork's flavor itself

I've done fat cap up and fat cap down
lately I've preferred it fat cap down and longer cooking times to render more fat
it's almost 'greasy' if you fail to render all of the fat out and it seems the fat cap only contributes 'extra' grease
