The difference between the two is that he is cornering on a bike that wont drag hard parts nearly so easily.

Doohan had lots of strange riding quirks that he made work. Certainly not saying that he was not skilled, just that his style really should not be used as an example of "the way it's done".

Cant really learn to ride by watching someone or reading books about, just doesn't work like that, most likely forget everything you read, the first corner you turn, and no matter how experienced you might be, on a strange road, the line is not allways the perfect one.

I don't know how you can judge the guy on the GS from that pic (unless you actually know that turn). The first thing I do when setting up for a turn is slide my butt over. And then when exiting the turn my butt is the last thing to get back to the centerline. So there are typically two times in many turns when I would look like that guy. I can't tell from the pic how much turn is left or whether a right-hander is coming up. It seems conceivable to me that guy simply hasn't apexed, or possibly even he did and is coming out to set up for a right sweeper.

You can argue about the 'right line' untill blue in the face, but in a real world situations, meaning a public road, you just can't take the right line every corner you turn, for hundred different reasons, especially if you never been on that partcular stretch before. On the track it's a different story, actually easier, as there is nobody coming the other way and you know each turn by heart, without a risk of hitting loose gravel, pot hole, assortment of wildlife, car full of drunk's straying onto your side of the road, bloke on a pair of roller skis, harvester at 2am, filling the whole road, to name just few surprises to make it hard to take the right line. I'd worry more about what gear i am in and the speed i am doing, going into a turn. Then again, there are no camera's taking picture's of me riding, oh yeah, i forgot the bloody speed cameras!
