I just figure out .78 grams fresh yeast per baguette in my bakery. It takes roughly 3x more yeast when using fresh, so roughly 2.5grams per 14oz baguette. Ours takes about 24 hrs to make though. Our durum, pictured above, uses .5 that at .36 grams per 21 oz loaf!

My original guess of 1/10 the yeast you're currently using at around 70deg will probably get you to the same place except it should have more flavor, nicer color and a better crust if that's your thing
Cool. Whenever I manage to get time to whip up another loaf I'll give it a try. Thanks.

*Edit, not to say I don't like the stuff I make. I just dunno wtf I'm doing. Throw stuff at the oven and beat it with a stick if it tries to crawl away again.

God I love this thread.

Jim Williams, you are a true artist. I love your posts. I wish your place was within driving distance.

I'm kinda glad he isn't within driving distance. I would be rolling in there on a regular basis. And I do mean "rolling".

No excuses from you. You're retired. It's not like we're separated from a massive body of water

My meager attempt... Neighbor gave us a breadmaker. We've had it for roughly 14 days and I've made roughly 17 loaves of bread.

Guess how many we've managed to freeze? TWO.

Think I've got the basic white bread recipe nailed. Time to start experimenting?

My wife makes a Finnish coffee bread called pulla. It has a cardomum flavor and is very tasty.
