Question SuperMoto Wheels for a WR250R

I got this great new bike and live in a big city. I don't want to wait to ride until I get it out of the city and I want to get some miles in around town and enjoy the new ride.

I'm looking for SuperMoto wheels to mount some street tires on but I'm finding that I have lots of questions.

Is there a 'right' size for my bike? I'm seeing people talk about using varying size wheels and I'm wondering what's right for me.

I'm not racing. I don't need the latest and greatest, lightest and most importantly most expensive wheels on the market. What are some good choices?

Lastly, I want to use my bike for both street and trail. That means that I still want to put my knobbies on the bike and tear up the dirt. I see some wheel sets that are including adapters to move the calipers. I don't want to do that. I don't want to have the move the caliper each time I change wheels. I know my stopping power won't be as great with a smaller rotor. I can live with that. Is there another reason that I'd want to do that?
