NYC to Denver; What not to miss

I have a tentative date of June 12 and a Green Flag for 2 weeks of vacation from work. I also have a promise to see family in Denver, CO and a Funduro 650. So, the equation is simple:
Bike + Time + Family obligations = Bike Trip

So as I put this together I'd really appreciate some advice from seasoned veterans on roads to avoid, roads that can't be missed and places along the way that must be experienced. I'd like to make it there in 5 days so that I have time with family

This is my first bike trip out west, everything else has been on the east coast. I'm no stranger to long days and miles but could really use some kind words of advice for avoiding trouble (and highway) along the way.

I travel light and pack to camp. Any input would be appreciated.
