Yes you are correct that the shocks are currently set light. I am considering upgrading the front forks with heavier springs as i am able to bottom out the front forks at speed on the logging roads when carrying what i consider a full load.

Can you shed some light on the "Weight Balance Issue" for me please ?

Bike tracks straight when i let go of the handlebars up to 110 km hour.

Bike pulls to the right when i apply the rear brakes and pulls to the left when i apply the front brakes.

I think your weight balance is pretty good with the loads you're carrying, not including a moose though ;) It's great that it tracks straight down the road at highway speed. It's a dirt bike with lights and a plate, it isn't designed to be the ultimate setup as far as handling on the highway but it shouldn't be sketchy feeling. The pulling to the left with the front is correct, it also helps settle the sidecar wheel when it tries to come up in a right hander. You can feather the front brake and add throttle to it in the right handers and it will try to drift through them. If the car comes up, use the front brake to put it back down, it does work, try it. pulling to the right with the rear brake applied, sidecar brake may be a little strong but with both front and rear applied like you would on a solo bike, it should go straight down the road under braking.
