I was looking at something like this myself. I came up with a design in my head but haven't gotten to the fabrication part yet. Please post if you find anything more.

I always wondered if you could just strap a duffel bag or something similar to the seat and use it as a backrest. I would try it but I don't have a bag.
Maybe someone already has done it. If so did it work. |

After seeing this post I thought of the MOD tail rack would be a good base to start the project on as it has lots of mounting holes and can be adjusted forward and back.
