I agree Fundy Park is nice

Fundy can be very foggy and cool but it's beautiful

There is a Provincial Campground at Parlee Beach in Shediac NB, that never gets foggy and it's an hour or so from Fundy. Parlee Beach camping is OK it's mostly just a big field, but the beach is great and boasts the warmest salt water, north of the Carolinas. 72 degrees in July/August. Shediac is also the "Lobster Capital of the World" A great place to go to an all you can eat lobster restaurant. There is an excellent one in Moncton (20 minutes from Shediac), called Fisherman's Paradise

There is a bar/restaurant at the wharf in Shediac called Captain Dan's that has good food and is popular with the beach crowd, especially on Thursday nights when it is packed with beach goers from University of Moncton.
