Yeah man, you aint seen nothing yet. Just wait until you hit the mountains in Colombia, the Peruvian Andes, and the altiplano of Bolivia. Epic stuff.
The best map of Mexico would be the Guia Roji. Its an road atlas type book with plenty of detail. Sanborn's should have it. A few places I would hit in Central Mexico for starters would be Durango (via the Mex 40 libre from Maz), Zacatecas, Guanajuato, Real de Catorce, San Miguel de Allende, all colonial gems. I wouldnt stick to the coast, you would be missing the best of Mexico by riding the coastal route. Maybe hit some places on the coast in Michoacan like Rio Nexpa, or in Oaxaca like Zipolite if you need a beach fix. Both are great places to chill out. Depending on how much exploring you want to do, you could spend a very long time in Mexico and not get bored with it. Buen viaje.

Its an interesting thing that most of the ADVers in Bellingham want to split. My sister lives there and loves it but my solar powered life doesn't allow me to visit for more than 3-4 days at a time.
