The 500 will get very close to the 700 at best economy. WMTC figures are 78 Imp mpg for the 700 and 76.3 for the 500. However the 500s wider operating RPM range and higher redline means the bike can be operated further from it's ideal with lower mpg as a result.

You guys are all over the place and no one guessed it yet.
It's for a photo-shoot. You can't tell how fast he's going in a photo, and "proper" posture on a bike looks good in a magazine. He was riding slow for that same reason too, easier to photograph.
