XR650L High Speed Sputter Help

So I picked up a brand new to me 1993 XR650L.

26K miles, and it sounds like rings and cam chain were done two owners ago.
No paperwork, so who knows.
PO said the bike came with a Flat Slide carb but he could never get it to idle properly, so he bought a XR650L stock carb (cv) on Fleabay and put it on the bike.

Supertrapp.

Bike will occasionally back fire when you first try and start it.

After starting with just a touch of "choke" it idles fine, runs great, etc. However, at higher RPMs it acts just like it is not getting fuel.

I can only reproduce this in third gear, and you have to be getting on it pretty hard. The bike cuts out, then back in, and if you back off the throttle it works fine again.

Here is what I have done:
1. Change the oil. You gotta.
2. Check the valves.
In: .005" (a bit loose but they were the same and I left them)
Out: Totally tight at .003", so I set them to .005"
3. Looked at plug. It was black at the tip and a bit oily maybe (looked like a new plug otherwise)
Test rode it, and it still does it.

What do I check next?

Is it time to pull the carb?

Valves should be 4 and 5. Time to pull the carb and see if Dave's Mods have been done to it. If not then it's time to do so. I might/should have the jets on hand.
