Eastern TN, Western NC dirt suggestions?

I'm working on planning a trip in early July to visit my in-laws in north eastern Tennessee (near Johnson City). I'm either going to ride there from Maine or truck my bike down. If I ride there it will likely be a KTM 950ADV, if I truck the bike there it will be a 525EXC. I'm leaning towards the latter at the moment, but I want to make sure there's plenty of "little bike stuff" to keep me busy for a couple of weeks if I do that. I'm looking for suggestions for day trips, 2-3 day overnighters, places not to miss, etc. Right now Max Patch Road, Trail 82 and something called the "dirt dragon" or "gravel dragon" have popped up as good places to ride. Doe Mtn looks promising, and I see references to Stone Mtn trails/roads nearby as well. Any other suggestions? Thanks!

The area around Max Patch is great to explore. On the west side of 40 you have Mt Sterling Rd that borders GSMNP. TN32 is a great twisty road if you want some curves.

Bumping this up to see if anyone else has any other suggestions.

Also, I'm thinking I might want to take a street ride with my wife while I'm down there. Is there any place that rents an FJR1300? Neither GSM Motorent nor Sportbikes4hire have an FJR.
